Tortola Stewed Chicken

We were in St. John, USVI recently and happened upon Driftwood Dave's in Cruz Bay. The atmosphere was casual and airy, the music was Caribbean (i.e., fun), and I had a really good stewed chicken. When I sent my compliments to the chef, he generously provided the recipe, which he says he obtained from a friend of his when he complained that "my chicken sucks!" If you ever happen to be down in St. John head to Driftwood Dave's - highly recommended.

(I have cut down the recipe so that it calls for 1 chicken.)

1 C. red wine vinegar
1/2 oz. soy sauce
1/4 oz. Worcestershire sauce
1 oz. Heinz 57
1/4 oz. Sriracha sauce ( a Thai sauce you can find bottled)
1/4 oz. A1 sauce
1 1/2 oz. ketchup
1 C. chicken stock
1 1/2 green peppers, chopped
1 whole chicken

Let stew for 2 hours. Serve over rice.
