Chocolate Sundae Dessert

I think this recipe came from Annie's high school cooking class. Mom made it a lot and we all loved it and it has become a favorite in our house, too. If I'm not mistaken, Donna made it for dessert at The Pub in Nordstrom's for St. Patrick's Day because the mint chocolate chip ice cream makes it green.

7 1/4 oz. box Nabisco Nilla Wafers (crushed)
1 stick margarine
2 cups powdered sugar (sifted)
6 oz pkg. chocolate chips
3 egg yolks, beaten
3 egg whites
1/2 gallon mint chocolate chip ice cream

Reserve 1 cup of Nilla Wafer crumbs in small bowl. Spread remaining crumbs in 9x13 pan.

Put margarine & chocolate chips in saucepan & melt over low flame. Add egg yolks and blend; add powdered sugar and blend in. Continue stirring & cook for 3 minutes. Remove from heat.

Beat egg whites until stiff. Fold into chocolate mixture. Pour chocolate mixture over crumbs in pan. Put in freezer until hard (approximately 1 hour). Remove ice cream from freezer and soften till spreadable.

Spread ice cream over chocolate mixture. Sprinkle remaining wafer crumbs over top and freeze, covered.
