Applesauce Roll

Since we're snowed in again in NJ, I decided to do some experimenting! Our kids love applesauce, so I modified the batter in a recipe I had for a jelly roll and made up this recipe for an applesauce roll.

1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon, plus more for sprinkling
3 large eggs
1 cup sugar
5 Tbsp. milk
1 tsp. vanilla
1 1/2 cup applesauce ("no sugar added" and unflavored)

Pre-heat oven to 375. Lightly grease a 15 by 10 jelly roll pan and line the pan with parchment paper. Lightly grease and flour the parchment.

Sift together the flour, baking powder, salt, and 1/2 tsp. cinnamon. Set aside.

Beat eggs until light yellow and slightly thickened. Gradually add sugar and mix well. Continue beating and add milk and vanilla. Gradually add flour mixture and beat until smooth. Pour batter into the prepared pan. Bake for 12-15 minutes, until the cake is just done. If you over-bake the cake it will be hard to roll.

As soon as you remove the cake from the oven, invert it onto a kitchen towel that has been sprinkled with confectioners' sugar. Quickly peel off the parchment paper. Trim 1/4 inch off each side of the cake. Spread the cake with the applesauce, leaving a small border along each edge. Sprinkle the applesauce lightly with cinnamon.

Working from a short edge, carefully roll the cake up. Wrap the roll in the towel to cool. Serve.
