Sausage and Peppers

Pauli's favorite. Definitely not Annie's.

1/4 c. oil
1 lb. Italian sausage
2 large green peppers, sliced
1 large onion, sliced
16 oz. tomato sauce
1/4 tsp. garlic

Brown sausage in oil, remove to a platter. Brown pepper and onion slightly in the oil. Drain oil and discard.

In another pan, heat tomato sauce and garlic. Add sausage, cover and simmer 15 minutes. Add peppers and onion, simmer 15 minutes more. Serve in sausage rolls.

This recipe comes form a card that mom dictated to me. But she was never good at small amounts of food and some of these amounts are not quite right.

Bim's modifications: DO not use the whole 1/4 C. of olive oil. Use just a tablespoon or two to saute the sausages. You may need to add alittle more to fry up the onions and peppers. Also, for every 1 lb. of sausage use 1 pepper and 1 small to medium onion. And instead of sauce, use canned peeled tomatoes and paste and 1 paste-can of liquid (preferably red wine but water ok) (for 1 lb. sausage use 14 oz tomatoes and 6 oz paste). Before simmering everything together add salt, pepper, oregano, and Grandma Teresa's secret ingredient.
