Coconut Oatmeal Cookies (Low Sodium)

 When you're forced to adhere to a low sodium diet, it can be shocking--I never realized how many high sodium foods we consume, especially baked goods. Hain No Sodium Baking Powder has been a lifesaver for me. I take existing recipes and experiment with substitutions for both salt and baking soda until something works well. These cookies have become essential treats for John and me!

1 c butter, softened
1 c sugar
1 c brown sugar
2 eggs
2 tsp vanilla extract
3 tsp no sodium baking powder
2 c flour
2 c oatmeal
1 c coconut flakes

Beat together first 5 ingredients in large bowl. Mix dry items in separate bowl. Add dry to wet gradually, beating well. Drop with tablespoon onto cookie sheets--keep in mind they may spread. Bake at 350 degrees for 10-12 minutes. Cool thoroughly. Can be frozen. Yield 50-60 cookies, depending upon preferred size.
