I've been experimenting with this recipe for the past few years and think I've finally perfected it, so I decided to post it this year.
2 3/4 cups flour
1/4 tsp salt
1 tsp baking soda
1 tsp nutmeg
1 cup butter, softened
1 1/2 cups sugar
1 tsp rum extract
2 eggs
2 tsp cream of tartar
colored sugar (red and green)
Preheat oven to 350. Line baking sheets with parchment paper. In small bowl combine flour, salt, baking soda and nutmeg. Set aside. In separate bowl cream butter with electric mixer. Add sugar and cream until light and fluffy. Add rum extract, eggs and cream of tartar and mix. Gradually add dry ingredients and mix until everything is combined, scraping down bowl as necessary.
Pour colored sugars separately on to flat plates or shallow bowls. Shape dough into small balls, using about a tablespoon of dough for each. Roll the balls in one of the sugars colors and place balls two inches apart on prepared cookie sheets. Bake for 10-12 minutes until the edges are slightly browned. Cool completely.
