Fish:
Marinate 1 lb. white fish (cut into cubes) in lime juice at least 4 hours. When done marinating, sprinkle lightly with salt and pepper, dip in flour, then egg wash and then panko bread crumbs to bread. Fry in hot oil over medium high heat until golden brown.
Dressing for slaw:
1/3 C. lime juice
2 T. honey
1 T. oil
1 tsp. cumin
Cayenne pepper to taste
Slaw:
1 C. chopped green cabbage
1 C. chopped red cabbage
1/4 C. chopped cilantro
Chopped jalapeno pepper, to taste
Pour dressing over cabbage.
To assemble tacos:
Place fish cubes in soft flour tortilla. Place slaw on top of fish. Garnish with fresh lime wedge. Serve with chips, guacamole.
