Neapolitan Cookies

2 1/2 C flour
1 1/2 tsp powder
1/2 tsp salt
1 C butter
1/2 C sugar
1 egg
1 tsp vanilla extract

Sift dry ingredients and set aside. Cream butter and sugar. Beat in egg and vanilla extract. Slowly add dry ingredients. Divide dough into thirds.

To one third add: 1 oz melted chocolate.
To one third add: 1/2 tsp almond extract and 6 drops red food coloring.
To one third add: 1/2 C chopped walnuts.

Line 9x5x3 load pan with waxed paper, leaving the two ends hanging over to make dough removal easy. Spread pink dough over paper/pan. Spread white dough over pink layer. Spread chocolate layer over white layer. Cover with waxed paper and freeze overnight. The next day remove from pan and cut loaf in half lengthwise. Cut into 1/8" slices. Place on parchment paper-lined cookie sheet and bake at 350 degrees for 10-12 minutes. Do not let them brown. Cool on rack.
