Butter and Jam Cookies

What can you do with the egg yolks you're left with after you've made Jimmy's pignoli cookies? Try making these. I combined a couple of different recipes and believe I have come up with the perfect thumbprint cookie.

3/4 C.  butter at room temperature
1/2 C. sugar
2 egg yolks
1 3/4 C. flour
approximately 1/2 C. preserves (your favorite flavor)

Preheat oven to 375. Cream butter and sugar. Add egg yolks. Stir in flour. Roll dough into 1-inch balls and place on pan 2 inches apart. Make an indentation with the back of a 1/4 teaspoon measuring spoon. Bake for 3 minutes.  In the meantime, place the preserves in a plastic bag and snip off one corner of the bag so you can pipe with it. Remove cookies from oven and, working quickly, pipe preserves into the indentation. Place back in oven for an additional 6 minutes. Cool on wire rack.
