This recipe tastes great, is simple, and is easy to remember : it's all "1's."
1 stick butter
1 C. flour
1 C. sugar
1 tsp. baking powder
1 C. milk
1 can sliced peaches - per the original recipe, but I use all kinds of fruit (peaches, blueberries, blackberries, etc.), usually fresh; Use 1-2 cups
Heat oven to 350. Place butter in 8x8 square pan, and melt in the oven while it preheats and you mix the rest of the ingredients. Mix dry ingredients, and then add milk and stir. Batter will be a little lumpy. Pour batter into pan with melted butter. Butter will float around and on top of batter - do not mix. Place fruit on top of all. Bake 30-40 minutes, until center is solid if pan is shaken a little. Great if served warm with vanilla ice cream.
